I’m Greg. What began with making pizza, testing dough, and sharing the process online has grown into building a pizza and bagel business here in Charleston. If you’ve been following along and wondering how to get the food, this page explains the plan and where to find the latest information.
What is a preorder drop?
A drop is a limited release of food for an announced service window. Instead of assuming the same menu is available every day, you check what is being offered for that release and place your order during its ordering window.
The plan for Greg’s is to keep the batches and menu focused. That gives me a manageable amount of food to prepare and a clear picture of the orders ahead. You’ll be able to review the actual offering and pickup information when a drop is announced.

How to follow the launch and order when a drop opens
- Join the text list. Open Greg’s Hotplate signup and follow the subscription prompts. It is free to join.
- Read the announcement. When a drop is announced, check the menu, release timing, pickup location, and collection window. Make sure the pickup details work for you before ordering.
- Choose from the available items. Use the live Hotplate listing for that drop. Photos and older posts show what I’ve been making; the current listing tells you what is actually available to order.
- Review and complete checkout. Check your items, quantities, pickup information, final total, and any stated order policies. Keep the confirmation you receive.
- Follow your confirmed pickup instructions. Use the address and time attached to your order. Each announcement will make clear where and when to collect the food.
A text subscription is not an order or a reserved item. It keeps you connected to announcements; purchasing happens separately when ordering is available. A spot on the list does not guarantee that every item will remain available.
What kind of food is Greg’s making?
Pizza is at the heart of this project: crisp crusts, golden pan pies, and toppings chosen for how they work together. Bagels bring the same care to a different process, with hand shaping, a boil before baking, and the chew that makes a bagel worth looking forward to.
The menu work includes round pizzas, Detroit-style pan pizza, and specialty rectangles, alongside bagels and spreads. Those are the directions I’m developing, not a promise that every style or flavor will appear in every drop. The live listing will be the place to check selection, prices, and quantities.

Where will pickup happen?
The launch is being developed for the Charleston area. There is not an announced pickup address to send you to yet. Please use the location in the published drop details when those become available, rather than treating a location discussed on social media as a confirmed service site.
For the same reason, don’t assume daily opening hours, walk-up stock, or delivery. Check the service details for the particular drop you want to order.
A few questions before the first drop
What does “Founding 100” mean?
That is the name of the early community signup on the website. It connects people to first-drop text alerts, menu previews, and launch updates. Joining does not automatically place an order.
Will social media still have updates?
Yes, the making and testing are part of the story I share. The official links page brings together the brand’s destinations. The Hotplate signup gives you a direct place to subscribe for food-drop announcements.
What if I have a question about an order, ingredients, or pickup?
Read the current listing first. If something is unclear, use the contact form on the official website before ordering. For an existing order, include its identifying details so the question can be matched to the right purchase.
Can I use Greg’s Lab if I’m not in Charleston?
Absolutely. Explore Greg’s Lab for the free calculators, Ingredient Library, and Gear Room. The Lab is for home bakers wherever they live; food-drop announcements are for people who can use the announced local service.
